Together with Totopia we have brewed Inari, inspired by the Japanese deity of agriculture, Inari Ōkami. We have decided to deviate a little from Totopia in terms of style description, and called this a Juicy Sour Ale, instead of Sour IPA, to not confuse people.

We learned all the tips and tricks from Totopia and took inspiration from both Japanese & Danish Cuisine with this one, flavoring the beer with a blend of forest berries. Eugene is very adamant on fruit ratios, and selecting the juiciest and sweetest purées, so we did that just that! After sampling and array of fruits, we came up with blend heavily leaning into Strawberry, with a dab of Blueberry, Blackberry, Sour Cherry, & Blackcurrant. We paired the berries with Strata, a very berry and strawberry forward hop, and we must say it works like a charm! To round off the sourness, we added lactose additions, alongside dark brown sugar, taking inspiration from the island of Okinawa’s famous Black Sugar!

To us, this is single handedly the best Sour beer we’ve ever made, with a silky slick body, great balance between acidity & sweetness, and loads of fruit flavor, making you think of forest berry porridge or yoghurts. We can’t wait to share this one with you all!
